While the kids were taking swim lessons, I was on the look out for quick dinners because it was essentially bedtime before we even got home. Sometimes the kids enjoyed picnic dinners in the car of sandwiches, cheese sticks and grapes or melon, other times I quickly whipped up something in the toaster oven when we got home. The favorite? Fish Nuggets from Trader Joes.
I'm glad we're back to being able cook dinner and get to bed on time, but I worry about what it'll be like when they're both in school and participating in extracurriculars. Pretty sure they won't want (or should have) some sort of nugget every night...
